Every year, as the sun sets over the lush mango orchards in Cairns, the farmers begin the meticulous process of handpicking the ripest mangoes. This tradition started with Old Bob deBrueys, a local legend who swore that twilight picking resulted in the juiciest, sweetest mangoes.
The mangoes are then washed, peeled, and the giant seed is removed before the pulp is gently fermented in stainless steel tanks. After fermentation, the wine undergoes careful filtration and is aged in tanks to maintain its vibrant, fruity character.
The final step is bottling, capturing the essence of a tropical evening in every sip.
